 🥑 Avocado Tomato Salad with Red Onion & Cilantro



Ingredients


2 ripe avocados, diced


1 cup cherry tomatoes, halved (150 g)


½ small red onion, thinly sliced


¼ cup fresh cilantro, chopped


2 tbsp olive oil


1 tbsp lime juice (or lemon juice)


Salt and freshly ground black pepper, to taste


Instructions


In a mixing bowl, combine avocado chunks, cherry tomatoes, red onion slices, and chopped cilantro.


Drizzle olive oil and lime juice over the salad.


Gently toss to combine, being careful not to mash the avocado.


Season with salt and freshly ground black pepper.


Serve immediately as a refreshing side dish or light lunch.
