Ingredients
3 eggs
180 g of sugar
120 ml of neutral oil
120 ml of honey
Zest of 1 orange
Zest of 1 lemon
1 teaspoon of vanilla essence
250 ml of milk
400 g of 0000 flour
1 heaped tablespoon of baking powder
1 pinch of salt
200g of candied fruit
50g of raisins
For the surface:
Extra candied fruits
A little honey for brushing
Preparation
Preheat the oven to 170°C and prepare greased and floured pudding molds.
In a large bowl, place the eggs along with the sugar and beat until well combined, without needing to reach the ribbon stage.
Add the oil in a thin stream while mixing, followed by the honey, vanilla, and citrus zest.
Add the milk and mix until you obtain a homogeneous preparation.
In another bowl, combine the flour, baking powder, and a pinch of salt.
Add the dry ingredients to the liquid mixture in two parts, integrating with gentle, folding movements.
Add the candied fruit and raisins, previously sprinkled with a tablespoon of flour so they don't sink to the bottom.
Pour the mixture into the molds, smooth the surface and distribute candied fruit on top.
Bake in the oven for 45 to 55 minutes, until a toothpick inserted comes out clean.
Remove from the oven and, while still hot, brush the surface with a little honey to give it shine.
Let cool completely before unmolding.
