Pineapple juice cake (quick blender version)
A moist and tropical pineapple cake, ready in minutes in a blender. Ideal for busy days, last-minute guests, or simply for enjoying an easy and delicious pineapple dessert.

Ingredients
For the cake
1 1/2 cups (190 g) all-purpose flour
1 cup (200 g) of granulated sugar
1/2 cup (120 ml) of neutral vegetable oil
3 large eggs
1/2 cup (120 ml) of pineapple juice (fresh or diluted concentrate)
(Optional for added moisture) 120g plain yogurt — replace half the pineapple juice (use 60ml juice + 60ml yogurt)
1 teaspoon (5 to 6 g) of baking powder
1 small pinch of salt
Optional: pineapple zest or 125 ml finely chopped pineapple
For the optional icing
1/2 cup (60 g) icing sugar
2 to 3 tablespoons of pineapple juice (adjust the amount according to the desired consistency)
Instructions
1. Preheat the oven
Preheat your oven to 180°C (350°F) .
Grease and flour a 20-22cm round cake tin or a medium loaf tin.
2. Mix the liquid ingredients
In a blender, combine the eggs, sugar, oil, and pineapple juice (and yogurt, if using).
Blend for 1 to 2 minutes until smooth and slightly aerated.
3. Add the dry ingredients
Add the flour and salt to the blender little by little, mixing at low speed or in short pulses.
Stop blending as soon as the batter is smooth. Avoid overmixing.
4. Add the baking powder
Turn off the mixer. Gently fold in the baking powder with a spoon or spatula.
If you are adding pineapple chunks or zest, fold them in now.
5. Bake in the oven
Pour the batter into the prepared pan.
Bake for 25 to 30 minutes , or until the top is golden brown and a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 5 to 10 minutes, then remove it from the pan.
6. Prepare the icing (optional)
Mix the icing sugar with the pineapple juice until you obtain a smooth glaze.
Pour it over the cake once it is still warm or completely cooled.
Tips for achieving better results
Drain the pineapple pieces well before adding them so that the cake does not become too wet.
Use yogurt for an extra-soft and fluffy texture.If you prefer a richer flavor, replace half the oil with melted butter.
Do not overmix after adding the flour — this will help keep the cake moist.
Add 2 tablespoons of grated coconut for a more pronounced tropical touch.
Freeze the slices for up to 2 months in an airtight bag.
