🌮 Grilled Chicken with Avocado and Pico de Gallo Recipe

🧂 Ingredients
For the Chicken:
2 large boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp chili powder
1 tsp cumin
½ tsp paprika
½ tsp garlic powder
Salt and black pepper, to taste
Juice of 1 lime
For the Pico de Gallo:
2 medium tomatoes, diced
¼ cup red onion, finely chopped
1 jalapeño, seeded and minced
¼ cup fresh cilantro, chopped
Juice of 1 lime
Salt, to taste
For Serving:
1 large avocado, sliced or diced
Optional toppings: sour cream, queso fresco, lime wedges, or grilled corn
🔥 Instructions
1. Prepare the Chicken Marinade:
In a bowl, mix olive oil, chili powder, cumin, paprika, garlic powder, lime juice, salt, and pepper.
Add chicken breasts and toss to coat evenly. Marinate for 20–30 minutes (or up to 2 hours for extra flavor).
2. Grill the Chicken:
Preheat grill (or grill pan) to medium-high heat.
Grill chicken for 5–7 minutes per side, until internal temperature reaches 165°F (74°C).
Remove and let rest for 5 minutes before slicing.
3. Make the Pico de Gallo:
Combine diced tomatoes, onion, jalapeño, cilantro, lime juice, and salt. Mix well and chill until ready to serve.
4. Assemble the Dish:
Place grilled chicken on a plate.
Top with fresh avocado slices and a generous scoop of pico de gallo.
