🥦 Broccoli Cheese Patties Recipe
Ingredients:
2 cups chopped broccoli florets (fresh or frozen)
1 cup shredded cheddar cheese (or mix cheddar & mozzarella)
½ cup breadcrumbs (plain or seasoned)
2 large eggs
¼ cup grated Parmesan cheese
¼ small onion, finely diced (optional)
1 clove garlic, minced (optional)
Salt and black pepper, to taste
½ tsp paprika or chili flakes (optional, for a little kick)
2 tbsp olive oil or butter (for pan frying)
Instructions:
1. Prep the broccoli:
Steam or microwave the broccoli until tender (about 5 minutes if fresh, 3 minutes if frozen).
Drain well and chop finely.
2. Mix ingredients:
In a large bowl, combine chopped broccoli, shredded cheddar, breadcrumbs, eggs, Parmesan, onion, garlic, salt, pepper, and paprika.
Stir until everything sticks together — the mixture should be thick and moldable.
(If it’s too wet, add a bit more breadcrumbs.)
3. Form patties:
Shape into small round or oval patties — about 2–3 inches wide.
4. Cook:
Heat olive oil or butter in a nonstick skillet over medium heat.
Fry patties for 3–4 minutes per side, until golden brown and crispy.
(You can also bake them at 400°F / 200°C for 18–20 minutes, flipping halfway.)
5. Serve:
Enjoy warm with your favorite dip — ranch, garlic aioli, or sour cream all pair perfectly!
