Ingredients

Chicken

  • 1 whole chicken, cut into pieces (or 2–3 lb chicken thighs/drumsticks)

Marinade

  • 2 cups buttermilk

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp garlic powder

Crispy Coating

  • 2½ cups all-purpose flour

  • 1 tbsp cornstarch (secret to extra crispiness)

  • 2 tsp paprika

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp chili powder or cayenne (optional, for heat)

For Frying

  • Vegetable oil or peanut oil (enough for deep or shallow frying)

Instructions

1. Marinate the Chicken

  1. In a large bowl, mix buttermilk, salt, pepper, paprika, and garlic powder.

  2. Add chicken pieces and coat well.

  3. Cover and refrigerate at least 2 hours, preferably overnight (this makes it juicy and flavorful).

2. Prepare the Coating

  1. In another bowl, mix flour, cornstarch, and all spices.

  2. Remove chicken from buttermilk, letting excess drip off.

  3. Dredge each piece firmly in the flour mixture, pressing it on well.

💡 Extra crispy tip: After coating, let the chicken rest on a rack for 10–15 minutes before frying.

3. Fry the Chicken

  1. Heat oil to 170–175°C (340–350°F).

  2. Fry chicken in batches (don’t overcrowd).

  3. Cook 12–15 minutes, turning occasionally, until golden brown and cooked through.

  4. Internal temperature should reach 75°C (165°F).

4. Drain & Rest

  • Remove chicken and place on a wire rack or paper towels.

  • Rest for 5 minutes before serving.
